Sassy Chicken & Veggie Stir-Fry

HEAT 3 tsp (15 mL) oil in large nonstick skillet or wok over high heat. Stir-fry chicken in batches until well browned, about 6 minutes. Transfer to plate.
ADD remaining 1 tsp (5 mL) oil to skillet. Stir-fry vegetables and ginger about 3 minutes until vegetables are tender-crisp. Return chicken to skillet.
STIR in Sweet Chili Sauce. Cook until sauce thickens slightly and mixture is well coated. Serve over cooked rice, if desired.
For convenience, purchase cut-up vegetables from the produce section of your local supermarket or use one 16 oz (500 g) bag frozen stir-fry vegetables, thawed and drained. Substitute shrimp, boneless pork or sirloin steak for the chicken.
