Buffalo Chicken Quesadillas

Ingredients:
| ½ cup | FRANK'S® REDHOT® Buffalo Wing Sauce | 125 mL |
| 2 cup | finely diced cooked chicken | 500 mL |
| 2 cup | shredded Monterey Jack cheese | 500 mL |
| 8 | flour tortillas (8 inch/20.5 cm) | 8 |
| Blue cheese salad dressing |
Directions:
TOSS chicken with Buffalo Wing Sauce in bowl.
LAYER chicken mixture and cheese on 4 tortillas, dividing evenly. Top each with second tortilla.
COOK about 3 to 5 min. on an electric grill pan or barbecue grill until toasted and cheese melts. Cut into quarters to serve. Serve with blue cheese dressing and additional Buffalo Wing Sauce.
Variations:
Substitute cooked shrimp or diced cooked steak for the chicken in this recipe.
Tips:
You may substitute ? cup (75 mL) FRANK'S® REDHOT® Cayenne Pepper Sauce mixed with 3 tbsp. (45 mL) melted butter.
