Sassy Chicken & Veggie Stir-Fry

Ingredients:
| 1 1/2 lb | boneless chicken breasts, cut into thin strips | 750 g |
| 4 tsp | vegetable oil, divided | 20 mL |
| 4 cup | cut-up vegetables such as snow peas and bell pepper strips | 1 L |
| 1 tbsp | grated fresh gingerroot | 15 mL |
| 1/3 cup | FRANK'S® Red Hot® Sweet Chili Sauce | 150 mL |
Directions:
HEAT 3 tsp (15 mL) oil in large nonstick skillet or wok over high heat. Stir-fry chicken in batches until well browned, about 6 minutes. Transfer to plate.
ADD remaining 1 tsp (5 mL) oil to skillet. Stir-fry vegetables and ginger about 3 minutes until vegetables are tender-crisp. Return chicken to skillet.
STIR in Sweet Chili Sauce. Cook until sauce thickens slightly and mixture is well coated. Serve over cooked rice, if desired.
Tips:
For convenience, purchase cut-up vegetables from the produce section of your local supermarket or use one 16 oz (500 g) bag frozen stir-fry vegetables, thawed and drained.
Substitute shrimp, boneless pork or sirloin steak for the chicken.
