Spicy Ham & Black Bean Soup

Ingredients:

2 tbsp vegetable oil 30 mL
1 onion, chopped 1
3 garlic, minced 3
4 black beans, undrained - 15-19 oz. cans (aprox. 500 g can) 4
4 cup reduced-sodium chicken broth 1 L
1/3 cup FRANK'S® REDHOT® Original or XTRA HOT Cayenne Pepper Sauce 75 mL
1 tbsp ground cumin 15 mL
4 cup diced boiled ham, smoked ham or smoked kielbasa sausage (about 1 lb./500 g) 1 L
1 cup diced canned tomatoes 250 mL

Directions:

HEAT oil in large saucepot; saute onion and garlic until tender. Stir in beans, broth, Frank's RedHot Sauce and cumin.

HEAT to boiling. Simmer, partially covered, 20 min.; stirring often.

PUREE 2 cups (500 mL) soup mixture in covered blender. Return to saucepan. Stir in ham and tomatoes; heat through.

Tips:

This soup freezes well. Freeze leftovers in individual portions. Thaw and reheat in microwave oven.
