Spicy Ham & Black Bean Soup

Ingredients:
| 2 tbsp | vegetable oil | 30 mL |
| 1 | onion, chopped | 1 |
| 3 | garlic, minced | 3 |
| 4 | black beans, undrained - 15-19 oz. cans (aprox. 500 g can) | 4 |
| 4 cup | reduced-sodium chicken broth | 1 L |
| 1/3 cup | FRANK'S® REDHOT® Original or XTRA HOT Cayenne Pepper Sauce | 75 mL |
| 1 tbsp | ground cumin | 15 mL |
| 4 cup | diced boiled ham, smoked ham or smoked kielbasa sausage (about 1 lb./500 g) | 1 L |
| 1 cup | diced canned tomatoes | 250 mL |
Directions:
HEAT oil in large saucepot; saute onion and garlic until tender. Stir in beans, broth, Frank's RedHot Sauce and cumin.
HEAT to boiling. Simmer, partially covered, 20 min.; stirring often.
PUREE 2 cups (500 mL) soup mixture in covered blender. Return to saucepan. Stir in ham and tomatoes; heat through.
Tips:
This soup freezes well. Freeze leftovers in individual portions. Thaw and reheat in microwave oven.
