Kickin' Chicken Stir-Fry

Ingredients:
| 1½ lb | boneless chicken breasts, cut into thin strips | 725 g |
| 4 tsp | vegetable oil | 25 mL |
| 4 cup | cut-up vegetables such as snow peas and bell pepper strips | 1 L |
| 1 tbsp | grated peeled ginger root | 15 mL |
| 1 tsp | minced garlic | 5 mL |
| 12 oz | prepared chicken gravy | 350 mL |
| ¼ cup | FRANK'S® REDHOT® Kickin' BBQ Sauce | 50 mL |
Directions:
HEAT 3 tsp. (15 mL) oil in large nonstick skillet or wok over high heat. Stir-fry chicken in batches until well browned, about 6 min. Transfer to plate.
ADD remaining 1 tsp. (5 mL) oil to skillet. Stir-fry vegetables, ginger and garlic 3 min. until vegetables are crisp-tender. Return chicken to skillet.
STIR in gravy and Kickin' BBQ Sauce. Cook until sauce thickens slightly and flavors are blended. Serve over cooked rice, if desired.
Variations:
Substitute 1 ½ lbs. (725 g) shrimp, boneless pork or flank steak for the chicken.
Tips:
Purchase cut-up vegetables from the produce section of your local supermarket or use one 16 oz. (455 g) bag frozen stir-fry vegetables, thawed.
